This wine comes from the complete fermentation of Palomino grape musts, but shows a special structure from the beginning that implies a destiny for oxidative aging. The initial fortification to 17% vol. of alcohol prevents the development of the velo de flor, so it ages exposed to the slow action of oxygen and wood through the traditional Jerez system of criaderas and solera in American oak casks.
